2 lbs beets
3 tbs evoo
2 tbs white wine vinegar
8 springs fresh thyme
1.5 tsp salt and 1 tsp pepper

Toss beets in bag with ingredients then double seal bag with heavy spoons to weight it down. Sous vide 191 for 4-6 hours.
