  • 3 large golden beets peeled and halved

  • Handful of fennel tops

  • 2 garlic cloves roughly chopped

  • Salt

  • Pepper

  • Cilantro and roasted onion olive oil

  • 1 lime

  • Cotija cheese

  • Fresh cilantro

Directions

  • Step 1

    Sous vide all together. Then remove beets and discard the rest. Top with fresh cilantro, lime and crumbled cotija cheese
