Ingredients
		- 3 large golden beets peeled and halved
 
		- Handful of fennel tops
 
		- 2 garlic cloves roughly chopped
 
		- Salt
 
		- Pepper
 
		- Cilantro and roasted onion olive oil 
 
		- 1 lime
 
		- Cotija cheese
 
		- Fresh cilantro
 
	
Directions
		- Sous vide all together. Then remove beets and discard the rest. Top with fresh cilantro, lime and crumbled cotija cheese
