  • Step 1

    From frozen, rinse steaks to improve adherence of seasonings.

  • Step 2

    Generously season with salt and pepper.

  • Step 3

    Place steaks into individual bags, adding rosemary, sage, lemon, and garlic.

  • Step 4

    Add 1 to 2 tablespoons of olive oil to bag and seal.

  • Step 5

    Place bags in sous vide bath at 145.4° for 6:00 hours

      Combined mushroom gravy with water according to package instructions. Add sherry and mustard.

    • Step 1

      Sear steaks in butter for 30 to 45 seconds per side, reserving juices and garlic; remove to platter and add gravy mixture to cast iron pan. Simmer 2 to 3 minutes to allow flavors to mingle nicely. Serve gravy on and with meat.
