Directions
- From frozen, rinse steaks to improve adherence of seasonings.
- Generously season with salt and pepper.
- Place steaks into individual bags, adding rosemary, sage, lemon, and garlic.
- Add 1 to 2 tablespoons of olive oil to bag and seal.
- Place bags in sous vide bath at 145.4° for 6:00 hours
Finishing Steps
- Combined mushroom gravy with water according to package instructions. Add sherry and mustard.
- Sear steaks in butter for 30 to 45 seconds per side, reserving juices and garlic; remove to platter and add gravy mixture to cast iron pan. Simmer 2 to 3 minutes to allow flavors to mingle nicely. Serve gravy on and with meat.
