  1. From frozen, rinse steaks to improve adherence of seasonings.
  2. Generously season with salt and pepper.
  3. Place steaks into individual bags, adding rosemary, sage, lemon, and garlic.
  4. Add 1 to 2 tablespoons of olive oil to bag and seal.
  5. Place bags in sous vide bath at 145.4° for 6:00 hours

Finishing Steps

  1. Combined mushroom gravy with water according to package instructions. Add sherry and mustard.
  2. Sear steaks in butter for 30 to 45 seconds per side, reserving juices and garlic; remove to platter and add gravy mixture to cast iron pan. Simmer 2 to 3 minutes to allow flavors to mingle nicely. Serve gravy on and with meat.
