Ingredients for 2

  • 4 x wild boar (or pork) chops Cleaned and dried

  • Large sprig fresh rosemary

  • 4 leaves fresh sage

  • 5 slices apple

  • Cup of white wine

  • Smoked salt

  • Pepper freshly ground

  • Virgin olive oil

Directions

  • Step 1

    Generously salt and pepper the chops, add other ingredient and seal. Refridgerate overnight if you can.

  • Step 2

    Place sealed bag into sous vide once up to temp

  • Step 3

    Prepare other accompaniment vegetables etc. we generally go with potato wedges and slaw

  • Step 4

    Once 1hr is over, grill over hot coals for 3 mins each side (or once a good crust has formed)

  • Step 5

    Rest for 7 mins
