  • 3 3/4 C 80 proof vodka

  • 5 vanilla beans

Directions

  • Step 1

    Fill 4 sterilized pint jars evenly with vodka, making sure to not fill above the bottom ring on the jar..

  • Step 2

    Slit each vanilla bean lengthwise and scrape the inside of the bean with a knife to loosen the seeds from the bean. Place the removed seeds equally between the jars of vodka.

  • Step 3

    Cut each bean in half and place them equally between the jars.

  • Step 4

    With a clean cloth, wipe rim of each jar and place a sterile lid and ring on each jar. Finger-tighten the rings only. If you over tighten, the jar will break.

  • Step 5

    Immerse jars in sous vide and process at 140° for 7.5 hours.

    • Finishing Steps

    • Step 0

      Remove from water bath and let cool.

    • Step 1

      Gently shake each jar once or twice a day for two weeks.

    • Step 2

      Rebottle as desired and enjoy.

    • Step 3

      Note: do not process in the sous vide for longer than 8 hours.
