Vanilla extract that takes two weeks instead of several months!

Ingredients

Directions

  1. Fill 4 sterilized pint jars evenly with vodka, making sure to not fill above the bottom ring on the jar..
  2. Slit each vanilla bean lengthwise and scrape the inside of the bean with a knife to loosen the seeds from the bean. Place the removed seeds equally between the jars of vodka.
  3. Cut each bean in half and place them equally between the jars.
  4. With a clean cloth, wipe rim of each jar and place a sterile lid and ring on each jar. Finger-tighten the rings only. If you over tighten, the jar will break.
  5. Immerse jars in sous vide and process at 140° for 7.5 hours.

Finishing Steps

  1. Remove from water bath and let cool.
  2. Gently shake each jar once or twice a day for two weeks.
  3. Rebottle as desired and enjoy.
  4. Note: do not process in the sous vide for longer than 8 hours.
