Vanilla Extract
Vanilla extract that takes two weeks instead of several months!

Ingredients
- 3 3/4 C 80 proof vodka
- 5 vanilla beans
Directions
- Fill 4 sterilized pint jars evenly with vodka, making sure to not fill above the bottom ring on the jar..
- Slit each vanilla bean lengthwise and scrape the inside of the bean with a knife to loosen the seeds from the bean. Place the removed seeds equally between the jars of vodka.
- Cut each bean in half and place them equally between the jars.
- With a clean cloth, wipe rim of each jar and place a sterile lid and ring on each jar. Finger-tighten the rings only. If you over tighten, the jar will break.
- Immerse jars in sous vide and process at 140° for 7.5 hours.
Finishing Steps
- Remove from water bath and let cool.
- Gently shake each jar once or twice a day for two weeks.
- Rebottle as desired and enjoy.
- Note: do not process in the sous vide for longer than 8 hours.
