Cooking sherry or other wine

Step 1
Season roast generously with salt and pepper and vacuum seal

Set Anova to 128.5° for 8 hours 30 minutes

Remove roast from bag, reserving juice

Dry with paper towels and season in roast seasoning

Sear in butter on all sides for 45 to 60 seconds

Step 3
Remove roast from pan and add reserved juices to the seasoned butter

In a separate pot, prepare Lawry’s mushroom gravy

Step 5
Add juice/butter mixture to mushroom gravy; add 2 to 3 tablespoons of cooking sherry or other wine. Serve gravy with meat and Yorkshire pudding.
