  1. Season roast generously with salt and pepper and vacuum seal
  2. Set Anova to 128.5° for 8 hours 30 minutes

Finishing Steps

  1. Remove roast from bag, reserving juice
  2. Dry with paper towels and season in roast seasoning
  3. Sear in butter on all sides for 45 to 60 seconds
  4. Remove roast from pan and add reserved juices to the seasoned butter
  5. In a separate pot, prepare Lawry’s mushroom gravy
  6. Add juice/butter mixture to mushroom gravy; add 2 to 3 tablespoons of cooking sherry or other wine. Serve gravy with meat and Yorkshire pudding.
