Ingredients for 4
½ tsp Garlic Powder
¾ tsp Ground Pepper
¾ tsp Rubbed Sage
1 ½ tsp Course Salt
8 Lamb Chops
Directions

Step 1
Mix all dry ingredients into a rub. Add the smallest amount to smallest amount to the chops before sealing them in bags.

Step 2
Seal 3-4 chops in each bags so they cook evenly throughout, trying to lay them as flat as possible.

Step 3
Put them into the precision cooking water for one and a half hours.

Step 4
When they're ready, pull them out and pat dry.

Finishing Steps

Rub the rest of the seasoning on the dried surface, adding more if needed.

Sear on each side in a skillet that is lightly oiled.
