  • Salt

  • Pepper

  • Any other seasonings you like for salmon

  • Avocado oil

  • Gochujang

  • Mirin

  • Sesame seeds

  • Sugar

  • Green onions

Directions

  • Step 1

    Dethaw salmon and dry brine: salt both sides and vac seal, put in fridge for 4-24 hours.

  • Step 2

    SV @ 118 for 50 minutes

  • Step 3

    Make a glaze using gochujang, mirin, sesame seeds, sugar, scallions and sesame oil and set oven to broil.

  • Step 4

    Lightly oil both sides and sear in CI pan, about 1 minute for flesh side and 2-3 minutes for skin side.

  • Step 5

    Brush on the glaze and place the salmon as close to the heating element as possible and finish glazing.

  • Step 6

    Garnished with green onions.
