  1. Dethaw salmon and dry brine: salt both sides and vac seal, put in fridge for 4-24 hours.
  2. SV @ 118 for 50 minutes
  3. Make a glaze using gochujang, mirin, sesame seeds, sugar, scallions and sesame oil and set oven to broil.
  4. Lightly oil both sides and sear in CI pan, about 1 minute for flesh side and 2-3 minutes for skin side.
  5. Brush on the glaze and place the salmon as close to the heating element as possible and finish glazing.
  6. Garnished with green onions.
