Ingredients
- Salmon
- Salt
- Pepper
- Any other seasonings you like for salmon
- Avocado oil
- Gochujang
- Mirin
- Sesame seeds
- Sugar
- Green onions
Directions
- Dethaw salmon and dry brine: salt both sides and vac seal, put in fridge for 4-24 hours.
- SV @ 118 for 50 minutes
- Make a glaze using gochujang, mirin, sesame seeds, sugar, scallions and sesame oil and set oven to broil.
- Lightly oil both sides and sear in CI pan, about 1 minute for flesh side and 2-3 minutes for skin side.
- Brush on the glaze and place the salmon as close to the heating element as possible and finish glazing.
- Garnished with green onions.
