Ingredients for 4

  • 4# pork loin

  • Spinach

  • Onions

  • Garlic

  • Mustard seed

  • Apples

  • Cream cheese

  • Provalogne

Directions

  • Step 1

    Carve a cavity in the pork loin. Mix half block of cream cheese and other ingredients to taste in a large bowl. Stuff the pork loin and tie with butcher string. Season with pork rib rub and sage. Cool for 4 hours at 140F. Finish in the broiler until all sides are golden.
