Steelhead Trout on Tahini Noodles

Ingredients for 2
1/3 cup of sesame oil
1/3 cup of soy sauce
1/3 cup of rice vinegar
3/4 cup of Tahini paste
1 tsp is Srirachi
Green onions
Shredded carrots
Fettuccini pasta
1 lemon
2 to 4 pieces of steelhead trout
1 tblsp of olive oil
Salt and pepper
Directions

Step 1
Boil fettuccini for 7-8 minutes

In a large bowl, mix all the ingredients together

When fettuccini is done, drain it, then add to the mix bowl and stir, making sure the noodles are coated in the sauce

Cover and refrigerate for around an hour or more

Salt and pepper the steelhead to taste

Add sliced lemons and two fresh dill sprigs onto each piece of fish

Add fish to sous vide bags and seal, removing all the air.

Place in water

Once done cooking, carefully remove fish from bag and dispose of the lemon slices and dill sprigs

Peel off the skin and carefully pat dry

In a skillet, over medium high heat, heat up olive oil

Sear each side of the fish for about 1 minute per side

Step 4
Serve hot steelhead on a bed of the cold Tahini noodles immediately
