Steelhead Trout on Tahini Noodles

Ingredients

  1. Boil fettuccini for 7-8 minutes
  2. In a large bowl, mix all the ingredients together
  3. When fettuccini is done, drain it, then add to the mix bowl and stir, making sure the noodles are coated in the sauce
  4. Cover and refrigerate for around an hour or more
  5. Salt and pepper the steelhead to taste
  6. Add sliced lemons and two fresh dill sprigs onto each piece of fish
  7. Add fish to sous vide bags and seal, removing all the air.
  8. Place in water

Finishing Steps

  1. Once done cooking, carefully remove fish from bag and dispose of the lemon slices and dill sprigs
  2. Peel off the skin and carefully pat dry
  3. In a skillet, over medium high heat, heat up olive oil
  4. Sear each side of the fish for about 1 minute per side
  5. Serve hot steelhead on a bed of the cold Tahini noodles immediately
