Steelhead Trout on Tahini Noodles
Fresh steelhead served on cold Tahini pasta. It will blow your mind.

Ingredients
- 1/3 cup of sesame oil
- 1/3 cup of soy sauce
- 1/3 cup of rice vinegar
- 3/4 cup of Tahini paste
- 1 tsp is Srirachi
- Green onions
- Shredded carrots
- Fettuccini pasta
- 1 lemon
- 2 to 4 pieces of steelhead trout
- 1 tblsp of olive oil
- Salt and pepper
Directions
- Boil fettuccini for 7-8 minutes
- In a large bowl, mix all the ingredients together
- When fettuccini is done, drain it, then add to the mix bowl and stir, making sure the noodles are coated in the sauce
- Cover and refrigerate for around an hour or more
- Salt and pepper the steelhead to taste
- Add sliced lemons and two fresh dill sprigs onto each piece of fish
- Add fish to sous vide bags and seal, removing all the air.
- Place in water
Finishing Steps
- Once done cooking, carefully remove fish from bag and dispose of the lemon slices and dill sprigs
- Peel off the skin and carefully pat dry
- In a skillet, over medium high heat, heat up olive oil
- Sear each side of the fish for about 1 minute per side
- Serve hot steelhead on a bed of the cold Tahini noodles immediately
