Ingredients for 4
One 2-4 Lb chuck roast
Salt
Pepper
1 sprig rosemary
4-5 cloves of garlic
Directions

Step 1
While preheating your sous vide, add about half of your desired salt to your chuck roast, and smash your garlic cloves with a knife.

Add roast, garlic, and rosemary to a bag and seal

Place in water bath for 24 hours.

Remove the roast from the bag, and place on a cooling rack. Remove your herbs and pat dry for a crispier crust.

Step 1
Place roast on a preheated grill (at least 500F) and cook for no more than 3 minutes a side. (Alternatively, you could use a preheated cast iron skillet or torch if you prefer)

Let rest for 10 minutes, then break the meat down into the individual muscle groups, carve, and serve.
