“Family size steak” chuck roast
A great way to feed a family/ party on a budget, this chuck roast comes out on par with a quality steak. You’ll never look at this budget friendly cut the same.

Ingredients
- One 2-4 Lb chuck roast
- Salt
- Pepper
- 1 sprig rosemary
- 4-5 cloves of garlic
Directions
- While preheating your sous vide, add about half of your desired salt to your chuck roast, and smash your garlic cloves with a knife.
- Add roast, garlic, and rosemary to a bag and seal
- Place in water bath for 24 hours.
Finishing Steps
- Remove the roast from the bag, and place on a cooling rack. Remove your herbs and pat dry for a crispier crust.
- Place roast on a preheated grill (at least 500F) and cook for no more than 3 minutes a side. (Alternatively, you could use a preheated cast iron skillet or torch if you prefer)
- Let rest for 10 minutes, then break the meat down into the individual muscle groups, carve, and serve.
