“Family size steak” chuck roast

A great way to feed a family/ party on a budget, this chuck roast comes out on par with a quality steak. You’ll never look at this budget friendly cut the same.

Ingredients

Directions

  1. While preheating your sous vide, add about half of your desired salt to your chuck roast, and smash your garlic cloves with a knife.
  2. Add roast, garlic, and rosemary to a bag and seal
  3. Place in water bath for 24 hours.

Finishing Steps

  1. Remove the roast from the bag, and place on a cooling rack. Remove your herbs and pat dry for a crispier crust.
  2. Place roast on a preheated grill (at least 500F) and cook for no more than 3 minutes a side. (Alternatively, you could use a preheated cast iron skillet or torch if you prefer)
  3. Let rest for 10 minutes, then break the meat down into the individual muscle groups, carve, and serve.
