St Louis cut ribs
Himalayan salt
Apple wood chips
Sweet rub
Sweet rib sauce

Directions

Step 1
2. Trim fat cap from top of ribs. (Can remove membrane from bottom if prefer, I don't)

1. Dry with paper towel

3. Lightly sprinkle Himalayan salt over top..

4. Place in fridge for 2 hours (or until salt and moisture is absorbed into ribs)

5. Vacuum seal and soak at 150°f for 24hr

6 Preheat smoker to 225°f (apple wood for great flavour).

7. Ice bath immediately finish in SV

8. Heavy sprinkle of sweet rub

9. Into smoker for 1.5hr

10. Slap favourite sweet sauce on top
