St Louis Ribs - combination of SV and Smoker

Ingredients
- St Louis cut ribs
- Himalayan salt
- Apple wood chips
- Sweet rub
- Sweet rib sauce
- Napkins
Directions

2. Trim fat cap from top of ribs. (Can remove membrane from bottom if prefer, I don't)
- 1. Dry with paper towel
- 3. Lightly sprinkle Himalayan salt over top..
- 4. Place in fridge for 2 hours (or until salt and moisture is absorbed into ribs)
- 5. Vacuum seal and soak at 150°f for 24hr
- 6 Preheat smoker to 225°f (apple wood for great flavour).
- 7. Ice bath immediately finish in SV
- 8. Heavy sprinkle of sweet rub
- 9. Into smoker for 1.5hr
- 10. Slap favourite sweet sauce on top
Finishing Steps
- 11. Remove after 30 minutes and devour
