1 tri-tip steak
Salt and pepper or your favorite steak rub
Oil for searing

Step 1
Set your Anova Sous Vide Precision Cooker to 140ºF / 60.0ºC

Season steak liberally with seasoning. Place in vacuum bag or resealable ziploc style bag.

Place in water bath and sous vide for 2 hours.

Heat skillet or pan over medium-high. Add oil until it shimmers and starts to smoke.

Remove steak from bag, dry well, season as necessary, and sear for 1-2 minutes in hot pan, turning to make sure all surfaces are browned.
