Today in the studio I'm cooking up a BEAUTIFUL piece of tri-tip from my local butchers - Porkies located in Honiton, Devon. Ingredients for 1

  • 1 tri-tip steak

  • Salt and pepper or your favorite steak rub

  • Oil for searing

Directions

  • Step 1

    Set your Anova Sous Vide Precision Cooker to 140ºF / 60.0ºC

  • Step 2

    Season steak liberally with seasoning. Place in vacuum bag or resealable ziploc style bag.

  • Step 3

    Place in water bath and sous vide for 2 hours.

      Heat skillet or pan over medium-high. Add oil until it shimmers and starts to smoke.

    • Step 1

      Remove steak from bag, dry well, season as necessary, and sear for 1-2 minutes in hot pan, turning to make sure all surfaces are browned.
