Sous Vide Tri-Tip Steak
Today in the studio I'm cooking up a BEAUTIFUL piece of tri-tip from my local butchers - Porkies located in Honiton, Devon.
My little secret to getting this piece of meat just right is using the Sous Vide cooking technique in the Anova Precision Cooker
I cannot tell you how tender this beast was, I can honestly say the meat melted like butter in my mouth.

Ingredients
- 1 tri-tip steak
- Salt and pepper or your favorite steak rub
- Oil for searing
Directions
- Set your Anova Sous Vide Precision Cooker to 140ºF / 60.0ºC
- Season steak liberally with seasoning. Place in vacuum bag or resealable ziploc style bag.
- Place in water bath and sous vide for 2 hours.

- Heat skillet or pan over medium-high. Add oil until it shimmers and starts to smoke.
- Remove steak from bag, dry well, season as necessary, and sear for 1-2 minutes in hot pan, turning to make sure all surfaces are browned.
