  • Kosher salt

  • 1 tbl black/green/pink peppercorn, coarsely ground

  • 1 tbl dried celery seed or 1/2 tbl dried celery salt

  • 2 tbl dried garlic powder

  • 4 sprigs finely minced fresh rosemary or 1 tbl finely minced dried rosemary

  • 1 qt beef stock (low-sodium if store-bought)

  • 2 egg whites
