Making mulled wine the conventional way can be quite labor intensive, mostly because you have to monitor the stovetop very closely; therefore, it's usually reserved for special occasions.
With the sous vide method, you can very easily make mulled wine on any night of the week. All you need to do is place the ingredients in a bag, set it and (nearly) forget it.

Ingredients for 2
½ bottle red wine
Juice of 2 oranges, peel of 1
1 cinnamon stick
50g caster sugar
1 bay leaf
1 vanilla pod, sliced in half lengthways
1 star anise

Step 1
Combine all of the ingredients in a bowl and then divide across two bags. Fold the top of the bag over a couple of times and clip to the edge of your water bath. Cook sous vide for 60 minutes at 140 F / 60 C.
