One of our favorite ways to capture and preserve their flavor is by making a Meyer lemon cordial — a strong, sweet alcohol that’s perfect for sipping after a meal. Ingredients for 6

  • 1 cup vodka

  • 1 cup granulated sugar

  • 1 cup freshly squeezed Meyer lemon juice (about 3 lemons)

  • Zest of 3 Meyer lemons

Directions

  • Step 1

    Set the Anova Sous Vide Precision Cooker to 135°F (57ºC).

  • Step 2

    Combine all ingredients in a large zipper lock bag. Seal the bag using the water immersion technique. Place the bag in the water bath and set the timer for 2 hours. Halfway through cooking, mix the contents of the bag to ensure that the sugar has dissolved.

      When the timer goes off, remove the bag from the water bath. Strain the contents of the bag through a fine-mesh strainer into a large bowl. Transfer to a storage bottle and refrigerate overnight before serving.
