Sous Vide Meyer Lemon Cordial
Meyer lemons, a fruit with flavor that exists somewhere between a lemon and an orange, are in season November through March. One of our favorite ways to capture and preserve their flavor is by making a Meyer lemon cordial — a strong, sweet alcohol that’s perfect for sipping after a meal. You can serve it at room temperature, chilled or over ice with club soda.

Ingredients
- 1 cup vodka
- 1 cup granulated sugar
- 1 cup freshly squeezed Meyer lemon juice (about 3 lemons)
- Zest of 3 Meyer lemons
Directions
- Set the Anova Sous Vide Precision Cooker to 135°F (57ºC).
- Combine all ingredients in a large zipper lock bag. Seal the bag using the water immersion technique. Place the bag in the water bath and set the timer for 2 hours. Halfway through cooking, mix the contents of the bag to ensure that the sugar has dissolved.
Finishing Steps
- When the timer goes off, remove the bag from the water bath. Strain the contents of the bag through a fine-mesh strainer into a large bowl. Transfer to a storage bottle and refrigerate overnight before serving.
