Ingredients for 2
12 chicken wings
6 tbs (88.7 mL) butter
¼ cup (59 mL) hot sauce
Seal all three ingredients in bags and cook sous vide at 147.2F (64C) for 2 hours.
Fish the wings out of the bag with tongs, shake off all excess liquid, and fry quickly in a very hot wok (or skillet) to brown the outside (less than 1 minute), then transfer to a serving plate.
Pour the liquid contents of the bag into the pan and reduce until sticky, then pour the sauce over the wings.
