Ingredients for 4
Beef heart - 2lb, trimmed and cleaned of all ventricles
2 tbs sea salt
1 tbs black pepper
2 tsp garlic powder
2 sprigs of fresh rosemary
2 sprigs of fresh thyme
1 cup tallow or duck fat, softened
Directions

Step 1
Trim the beef heart of all ventricles and silverskin.

Step 2
Place the beef heart into a sous vide bag with all the remaining ingredients.

Step 3
Place in sous vide at 185 degrees for 18 hours.

Step 4
Remove beef heart from sous vide and sear in tallow or fat for 2 minutes per side.

Step 5
Slice against the grain and serve with vegetable of choice.
