Directions

  1. Trim the beef heart of all ventricles and silverskin.
  2. Place the beef heart into a sous vide bag with all the remaining ingredients.
  3. Place in sous vide at 185 degrees for 18 hours.
  4. Remove beef heart from sous vide and sear in tallow or fat for 2 minutes per side.
  5. Slice against the grain and serve with vegetable of choice.
