Sous Vide Beef Heart Confit

Ingredients
- Beef heart - 2lb, trimmed and cleaned of all ventricles
- 2 tbs sea salt
- 1 tbs black pepper
- 2 tsp garlic powder
- 2 sprigs of fresh rosemary
- 2 sprigs of fresh thyme
- 1 cup tallow or duck fat, softened
Directions
- Trim the beef heart of all ventricles and silverskin.
- Place the beef heart into a sous vide bag with all the remaining ingredients.
- Place in sous vide at 185 degrees for 18 hours.
- Remove beef heart from sous vide and sear in tallow or fat for 2 minutes per side.
- Slice against the grain and serve with vegetable of choice.
