Ingredients for 4
Pepper
Salt
Wood Pellets (Hickory pref.)
4-6oz Tenderloin steak (fresh not frozen)
Herbs optional recommend Rosemary
Directions

Step 1
Set your Anova Sous Vide Precision Cooker to 120ºF / 48.9ºC

Step 2
Allows steaks to sit at room temperature for approx 30 min to an hour depending on storage temp of steaks

Step 3
Individually seal steaks in vacuum bag or ziploc

Step 4
Submerge and cook to 120F for approx 1 - 2 hrs. Steak internal temp should be read at 120F

Step 5
Keep steaks sealed until ready to move on to finishing

Traeger Or Equivalent Wood Pellet Grill

Set wood pellet grill temp to SMOKE

Step 1
Place steaks on non stick grill sheet and smoke for approx 20-30 mins (Ensure internal temp does not exceed 145f for medium rare)

Set steaks aside and cover. Set temperature of grill to HIGH (400f+) and allow grill to fully come to temp

Step 3
Grill steaks directly on grill surface approx 2min/side (1min steak rotation) flip once and repeat rotation (2min/1min rotate) to ensure perfect grill marks

Step 4
Place steaks on plate and tent with tin foil. Allow steaks to sit for approx 10mins to allow juices to redistribute.
