  • 14lb packer brisket

Directions

  • Step 1

    Trim brisket, remove all fat and silver skin. Separate flat from point.

  • Step 2

    Season with SMP Ultimate Black Rub

  • Step 3

    Smoke for 3-4 hours low temp with mesquite wood.

  • Step 4

    Vacuum seal (double bag)

  • Step 5

    Place in Sous Vide bath at 160F for 72 hours
