  1. Trim brisket, remove all fat and silver skin. Separate flat from point.
  2. Season with SMP Ultimate Black Rub
  3. Smoke for 3-4 hours low temp with mesquite wood.
  4. Vacuum seal (double bag)
  5. Place in Sous Vide bath at 160F for 72 hours
