Ingredients for 4

  • 1.5 kg sirloin and filet roast with mushrooms duxelles

Directions

  • Step 1

    The roast already came fully prepared from Donald Russell. I removed it from its original packaging and placed it in a vacuum sealed bag.

  • Step 2

    Once in the bag, set the Anova to the desired temperature and time, in this case 55c for 3 hours.

  • Step 3

    After desired timing is reached, take it out of the bag and rest for 20-30 minutes, but not too long as the meat may harden.

  • Step 4

    Once rested, sear in a frying pan without any oil, on all sides.

  • Step 5

    Once seared, rest for another few minutes and slice thinly, as some salt and serve.
