Sirloin and filet roast with mushrooms duxelles

Roast beef cooked rare. First time trying it so adjust your timing based on how you like your meat. This one came out exactly as I wanted, rare but soft and tender.

  1. The roast already came fully prepared from Donald Russell. I removed it from its original packaging and placed it in a vacuum sealed bag.
  2. Once in the bag, set the Anova to the desired temperature and time, in this case 55c for 3 hours.
  3. After desired timing is reached, take it out of the bag and rest for 20-30 minutes, but not too long as the meat may harden.
  4. Once rested, sear in a frying pan without any oil, on all sides.
  5. Once seared, rest for another few minutes and slice thinly, as some salt and serve.
