3 beef short ribs
1/4 cup apple cider vinager
2 tbsp minced garlic
1 tbsp ground black pepper
1 tbsp salt
3 tbsp lime juice
1/2 tbsp ground clove
2 bay leaves
3 chipotle chiles in adobe
3 tbsp sofrito
1 fancy pimento (or grilled red pepper)
Directions

Step 1
Sear beef short ribs on a BBQ or grill

Step 2
In a food processor blend all remaining ingredients apart from the bay leaves

Place short ribs and sauce along with the bay leaves into a vac-bag or ziplock bag and seal (Double bag for extra protection)

Sous vide for 24hrs

Drain liquid from the bag and remove bay leaves Save the liquid!

Shredd beef ribs with two forks while still hot

Spoon reserved liquid over beef and serve Enjoy
