Short Rib Barbacoa

Ingredients
- 3 beef short ribs
- 1/4 cup apple cider vinager
- 2 tbsp minced garlic
- 1 tbsp ground black pepper
- 1 tbsp salt
- 3 tbsp lime juice
- 1/2 tbsp ground clove
- 2 bay leaves
- 3 chipotle chiles in adobe
- 3 tbsp sofrito
- 1 fancy pimento (or grilled red pepper)
Directions
- Sear beef short ribs on a BBQ or grill
- In a food processor blend all remaining ingredients apart from the bay leaves
- Place short ribs and sauce along with the bay leaves into a vac-bag or ziplock bag and seal
(Double bag for extra protection)
- Sous vide for 24hrs
Finishing Steps
- Drain liquid from the bag and remove bay leaves
Save the liquid!
- Shredd beef ribs with two forks while still hot
- Spoon reserved liquid over beef and serve
