Ingredients for 1
1 chicken breast
Rotisserie (or preferred) seasoning
Directions

Step 1
1. Select a raw unfrozen chicken breast.

2. Flatten breast and apply olive oil to both sides.

3. Liberally apply seasoning or rub to both sides.

4. Seal in a sous vide bag.

5. Freeze until ready to cook.

6. Preheat sous vide bath to 160°F.

7. Add and anchor vacuumed breast in bath when at temperature.

8. After 80 minutes of cooking time heat searing pan to 400°F.

Step 9
9. After 90 minutes of cooking time, remove chicken from bath and stop cooking by placing in an ice bath for 1 minute while you add beef tallow or rarified butter to seating pan

Step 10
10. Place breast in searing pan for 20-25 seconds on both sides (or less for desired texture) and serve with preferred garnish and sauce.
