Rotisserie Seasoned Chicken Breast

Ingredients
- 1 chicken breast
- Rotisserie (or preferred) seasoning
Directions
- 1. Select a raw unfrozen chicken breast.
- 2. Flatten breast and apply olive oil to both sides.
- 3. Liberally apply seasoning or rub to both sides.
- 4. Seal in a sous vide bag.
- 5. Freeze until ready to cook.
- 6. Preheat sous vide bath to 160°F.
- 7. Add and anchor vacuumed breast in bath when at temperature.
- 8. After 80 minutes of cooking time heat searing pan to 400°F.
- 9. After 90 minutes of cooking time, remove chicken from bath and stop cooking by placing in an ice bath for 1 minute while you add beef tallow or rarified butter to seating pan
- 10. Place breast in searing pan for 20-25 seconds on both sides (or less for desired texture) and serve with preferred garnish and sauce.
