  • Sesame oil

  • Black sesame

  • White sesame

  • Chives

  • Salt

  • Black pepper

Directions

  • Step 1

    Descale the salmon's skin (can be done by hosing it down), and slit to avoid flaring.

  • Step 2

    Season each piece of salmon with salt and pepper.

  • Step 3

    Pour A LITTLE sesame oil, for flavour and to avoid sticking to the bag.

  • Step 4

    Bag the salmon pieces, vacuum the bag and place in the water bath.

  • Step 5

    After cooking is done, pat dry and sear in a little bit of vegetable oil.
