Set your Anova Sous Vide Precision Cooker to 129.0ºF / 53.9ºC.

Season the rack with salt, pepper, thyme and vacuum seal.

Cook for 1 hour.

Coat And Broil

Place one cup of pork rinds in a plastic bag and crush.

Step 1
Add salt, pepper,thyme and oregano to the crushed pork rinds.

Coat the roast with Dijon mustard and roll in the seasoned pork rinds.

Place under the broiler for 5 minutes per side or until browned.
