  1. Set your Anova Sous Vide Precision Cooker to 129.0ºF / 53.9ºC.
  2. Season the rack with salt, pepper, thyme and vacuum seal.
  3. Cook for 1 hour.

Coat And Broil

  1. Place one cup of pork rinds in a plastic bag and crush.
  2. Add salt, pepper,thyme and oregano to the crushed pork rinds.
  3. Coat the roast with Dijon mustard and roll in the seasoned pork rinds.
  4. Place under the broiler for 5 minutes per side or until browned.
  5. Slice and serve
