  • Garlic, sliced

  • Olive oil

  • Sherry

  • Sliced mushrooms

Directions

    Dry brine 2-3 hours prior to cooking

    Remove excess salt with paper towel

  • Step 3

    Season racks with rosemary sprigs, thyme, and sliced garlic

  • Step 4

    Insert racks into bag and add olive oil; vacuum seal

      Sear racks in cast-iron pan with butter for 60 to 90 seconds per side

    • Step 2

      Remove meat; add reserved liquid, sherry and mushrooms to pan.
