Ingredients

Directions

  1. Dry brine 2-3 hours prior to cooking
  2. Remove excess salt with paper towel
  3. Season racks with rosemary sprigs, thyme, and sliced garlic
  4. Insert racks into bag and add olive oil; vacuum seal

Finishing Steps

  1. Remove racks from bag, reserving juice
  2. Sear racks in cast-iron pan with butter for 60 to 90 seconds per side
  3. Remove meat; add reserved liquid, sherry and mushrooms to pan.
  4. Serve racks with sauce
