Ingredients
- Salt (dry brine )
- Fresh rosemary
- Fresh thyme
- Garlic, sliced
- Olive oil
- Sherry
- Sliced mushrooms
- Butter
Directions
- Dry brine 2-3 hours prior to cooking
- Remove excess salt with paper towel
- Season racks with rosemary sprigs, thyme, and sliced garlic
- Insert racks into bag and add olive oil; vacuum seal
Finishing Steps
- Remove racks from bag, reserving juice
- Sear racks in cast-iron pan with butter for 60 to 90 seconds per side
- Remove meat; add reserved liquid, sherry and mushrooms to pan.
- Serve racks with sauce
