Ingredients for 0
1 gallon of whole milk (not ultrapasteurized)
1 tb spoon salt
1/4 of rennet tablet
1/4 cup of distilled water
Directions

Step 1
Dissolve 1/4 of Rennet tablet on distilled water

Step 2
Set Anova to 96F 36C, for 45 min

Step 3
Pour the milk on a pan and wait until Anova reaches the temperature

Insert milk pan on Anova recipient and adjust temperature to increase to 97

Step 5
Pour the dissolved rennet on milk and stir. Add 1tbs of salt

Step 6
Wait for 35 minutes and stir again. The mass will precipitate and the whey will come to top

Step 7
Move the mass to a mold and press to remove the excess whey. Put the mold to rest for 1/2 day on refrigerator inside a pan as it is going to release whey

Discard the whey, remove cheese from mold and it’s ready.
