Ingredients
- 1 gallon of whole milk (not ultrapasteurized)
- 1 tb spoon salt
- 1/4 of rennet tablet
- 1/4 cup of distilled water
Directions
- Dissolve 1/4 of Rennet tablet on distilled water
- Set Anova to 96F 36C, for 45 min
- Pour the milk on a pan and wait until Anova reaches the temperature
- Insert milk pan on Anova recipient and adjust temperature to increase to 97
- Pour the dissolved rennet on milk and stir.
Add 1tbs of salt
- Wait for 35 minutes and stir again. The mass will precipitate and the whey will come to top
- Move the mass to a mold and press to remove the excess whey. Put the mold to rest for 1/2 day on refrigerator inside a pan as it is going to release whey
- Discard the whey, remove cheese from mold and it’s ready.
