Ingredients for 4
Pork shoulder - 500g
Brown sugar - 3 TBSP
Smoked paprika - 3 TBSP
Honey - 1 TBSP
Dark beer - 250ml
Hoisin sauce - QS
Pickles - QS
Directions

Step 1
Prepare the rub with smoked paprika, honey and brown sugar. Rub the pork shoulder and keep it in the fridge for 12h.

Boil the dark beer to remove the alcohol and freeze it straight after, making ice cubes out of it.

Step 3
After 12h, take out the rubbed pork shoulder from the fridge and seal it together with 6 dark beer ice cubes. Cook it for 24h at the suggested temperature.

Step 4
Once the meat is ready, remove it from the bag and start pulling it. Cook it in a pan for 5 min to reduce the juices and you’re ready to assemble.

Open the steamed bao buns and place pulled pork in the center of the bun, squeeze on your favorite hoisin sauce, top with some nice pickles.
