Ingredients
- Pork shoulder - 500g
- Brown sugar - 3 TBSP
- Smoked paprika - 3 TBSP
- Honey - 1 TBSP
- Dark beer - 250ml
- Hoisin sauce - QS
- Pickles - QS
Directions
- Prepare the rub with smoked paprika, honey and brown sugar. Rub the pork shoulder and keep it in the fridge for 12h.
- Boil the dark beer to remove the alcohol and freeze it straight after, making ice cubes out of it.
- After 12h, take out the rubbed pork shoulder from the fridge and seal it together with 6 dark beer ice cubes. Cook it for 24h at the suggested temperature.
- Once the meat is ready, remove it from the bag and start pulling it. Cook it in a pan for 5 min to reduce the juices and you’re ready to assemble.
Finishing Steps
- Open the steamed bao buns and place pulled pork in the center of the bun, squeeze on your favorite hoisin sauce, top with some nice pickles.
