Sous Vide Prosciutto Wrapped Asparagus and Egg
Ingredients for 3
3 large eggs
12 asparagus spears, trimmed
3 slices prosciutto, each sliced into 4 strips
1 tablespoon extra virgin olive oil
Salt and freshly ground black pepper
Set the Anova Sous Vide Precision Cooker to 145ºF (63.3ºC).
Using a slotted spoon, carefully place eggs in water bath. Set the timer for 1 hour.
About 15 minutes before the eggs are finished, heat the broiler to high.
Wrap each asparagus spear with one strip prosciutto. Place on a broiler-safe baking sheet and drizzle with olive oil. Lightly season with salt and pepper.
Broil asparagus, flipping halfway through, until prosciutto crisps and spears are tender, 8 to 12 minutes. Divide between 3 serving plates.
When the timer goes off, carefully remove the eggs from the water bath. Carefully crack the shells and slide each egg out onto a plate with the asparagus.
Season egg with salt and pepper. Serve.
