Ingredients
- 3 large eggs
- 12 asparagus spears, trimmed
- 3 slices prosciutto, each sliced into 4 strips
- 1 tablespoon extra virgin olive oil
- Salt and freshly ground black pepper
Directions
- Set the Anova Sous Vide Precision Cooker to 145ºF (63.3ºC).
- Using a slotted spoon, carefully place eggs in water bath. Set the timer for 1 hour.
- About 15 minutes before the eggs are finished, heat the broiler to high.
- Wrap each asparagus spear with one strip prosciutto. Place on a broiler-safe baking sheet and drizzle with olive oil. Lightly season with salt and pepper.
- Broil asparagus, flipping halfway through, until prosciutto crisps and spears are tender, 8 to 12 minutes. Divide between 3 serving plates.
Finishing Steps
- When the timer goes off, carefully remove the eggs from the water bath. Carefully crack the shells and slide each egg out onto a plate with the asparagus.
- Season egg with salt and pepper. Serve.
