Step 1
Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.

Cut bone from roast and season all areas of bone and roast

Tie roast and bone back together, then vacuum seal

Step 4
Let rest in fridge for 24 hrs

Step 5
Cook in sous vide at 140 for 6 hrs

Step 6
Remove from bag, pat dry, and let rest for 30 mins

Preheat over to 450

Baste with butter and chopped garlic

Put roast in over for 15-20 mins until brown and seared.
